Zucchini Noodles with Roasted Garlic Beet Sauce, Parmesan, and White Wine Chicken
Ingredients
One fresh zucchini, grated into noodles
Two fresh beets, roasted with two cloves of garlic and onion and then processed with 1/4 plain Greek yogurt until smooth
1/4 cup of shredded parmesan cheese (add to zucchini noodles while cooking)
1 chicken breast, sautéed with white wine vinegar, fresh thyme, garlic powder, salt, and pepper
2 tablespoons of herbed goat cheese
1/4 cup chopped pistachios
2-3 olive oil and garlic preserved artichoke hearts
