Zucchini Noodles with Roasted Garlic Beet Sauce, Parmesan, and White Wine Chicken


Ingredients

  • One fresh zucchini, grated into noodles

  • Two fresh beets, roasted with two cloves of garlic and onion and then processed with 1/4 plain Greek yogurt until smooth

  • 1/4 cup of shredded parmesan cheese (add to zucchini noodles while cooking)

  • 1 chicken breast, sautéed with white wine vinegar, fresh thyme, garlic powder, salt, and pepper

  • 2 tablespoons of herbed goat cheese

  • 1/4 cup chopped pistachios

  • 2-3 olive oil and garlic preserved artichoke hearts

  • Alfalfa sprouts
